Carrots are tasty low-calorie sweet and crunchy vegetables that are ideal for salad recipes. Enjoy this quick-n-easy carrot salad that also features golden raisins and walnuts. This recipe is best served as a side salad alongside a favorite main dish such as grilled chicken or a veggie burger.
Quick-n-easy carrot, golden raisin & walnut salad recipe
Serves 6
Salad base ingredients:
Salad dressing ingredients:
- ¼ cup plain Greek yogurt
- 1 Tablespoon fresh-squeezed lemon juice
- ¼ teaspoon cinnamon (optional)
Salad directions:
In a medium-size bowl, gently toss the salad base ingredients together. Set aside. Meanwhile, in a small bowl, blend the salad dressing ingredients until well-mixed. Add the dressing to the base and serve. Refrigerate any leftovers. Enjoy!
